Protein shakes are good but they do not really keep well in a hot car while running errands. Here’s an easy and quick way to prepare protein supplements in minutes so you can take them with you and not have to worry about making a mess
1 cup canned pumpkin
. 6 scoops of protein powder.
silicone muffin pan.
paper liners or nonstick cooking spray.
– 1 –
Prepare silicone muffin sheet by lining muffin cups with paper liners or spray each muffin cup with nonstick cooking spray. This will prevent the muffins from sticking and breaking apart when you try to remove them.
– 2 –
In a large bowl mix in a cup of canned pumpkin with six bullets of any flavor protein powder. (My personal favorite protein powder to use for this recipe is All Whey their cupcake batter protein powder)
– 3 –
Keep mixing it until everything is well blended. It would appear that the powder should not interfere into the first but it will you just have to keep at it.
– 4 –
When the batter is uniform color divide it evenly among the 12 prepared muffin cups.
– 5 –
Pop muffin pan in the microwave and microwave on high for 5 minutes. Test muffins for the final result by sticking a knife in the middle of one if it comes out clean then they’re done. Otherwise continue to cook at one minute intervals until the muffins are cooked all the way through.
Store muffins in a ziploc bag. This is a great snack when you’re on the go and two muffins give you as much protein as a scoop of protein powder.
